Easy mini chicken pot pies


  • 1 store-bought refrigerated pie crust (or use homemade if preferred)
  • 1 1/2 cups cooked and shredded rotisserie chicken
  • 1 cup mixed vegetables (frozen peas, carrots, corn, and green beans), thawed
  • 1/3 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • Optional: Chopped fresh parsley for garnish


  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Prepare Pie Crust:
    • Roll out the pie crust on a floured surface. Use a round cookie cutter or a glass to cut out circles that fit your mini muffin tin.
  3. Line Muffin Tin:
    • Press each pie crust circle into the cups of a mini muffin tin, forming mini pie shells.
  4. Prepare Filling:
    • In a medium saucepan, melt the butter over medium heat. Add the flour and stir continuously to create a roux.
    • Gradually whisk in the chicken broth and milk until the mixture is smooth and thickened.
    • Season the sauce with salt, black pepper, and dried thyme.
  5. Add Chicken and Vegetables:
    • Stir in the shredded rotisserie chicken and mixed vegetables until well combined. Remove from heat.
  6. Fill the Pie Shells:
    • Spoon the chicken and vegetable mixture into each mini pie shell.
  7. Top with Pie Crust:
    • Roll out the remaining pie crust and cut small circles to fit as tops for each mini pot pie. Place the circles over the filling in each cup.
  8. Ventilation (Optional):
    • Use a knife to make a small slit in the top of each mini pie to allow steam to escape during baking.
  9. Bake:
    • Bake in the preheated oven for 12-15 minutes or until the crust is golden brown.
  10. Cool and Garnish:
    • Allow the mini chicken pot pies to cool for a few minutes before carefully removing them from the muffin tin. Garnish with chopped fresh parsley if desired.
